Why the WiiU gamepad doesn't act as the sheikah slate when playing? I know there's also the Switch version and nintendo probably didn't wanted for that to be inferior but it would have been perfect to check the map looking down to the pad, they must have done it and scrapped it

They actually did it. You can see it in an demo presentation from 2015. But you already said it, they got rid of it.
nintendo likely shifted their priorites to the switch version of the game. after all, there's literally a shirt with the switch logo on it in the DLC!
