When I try to start Mario Kart 8, it tells me that an update is required and refuses to start despite my Wii U being on the latest version (5.5.5E) and having the update data. Does anyone know what to do?

that means Mario Kart needs to update, the easist way to update it would to be turning off ur pretendo, updating it, then logging back into your pretendo, but make sure to update it using an offline account, or else it will auto log you out of your pretendo account
I just went and factory reset my Wii U and it's working now. Did waste some of my time tho...
