Planning on starting a world on here, but kinda concerned about it being stuck on Wii U, should I just start it anyway and figure that out later

why would you not want it to be on the wii u? do you pefer playing on the other consles?
I prefer playing on Java, however I may want to convert my world to later versions (i.e bedrock) then perhaps convert from Bedrock to Java
