Can you do this with a disc?

Sadly, I don't think it's possible with a physical copy. The physical copy for Minecraft released on June 17, 2016. By then, the game had already been updated multiple times, meaning the launch build for the disc version was whatever the latest update was at the time.

Your best bet would be to find a digital dump of the game without including any updates to get the 2015 launch build. Though I don't think I can say where to find one since that would probably get me banned. However, a digital dump for the game is not difficult to find online.
