I have started getting Wii U versions of my Switch games, so I must ask, if I already have Mario Kart 8 Deluxe and Mario Kart World, is Mario Kart 8 still worthwhile?

If you like playing singleplayer then yes cause the bots are more challenging, but if you do mostly multiplayer then it's not a big deal.
