Can anyone help me why is splatoon not updating? i think whatbi remember is that i *accidentally* deleted the update data, can anyone help me get it back?

maybe go to wup installer gx2
You could try reinstalling the update through the purple chestnut app with three capital letters (it won't let me say it, you know the one). It's not stealing if you own the game and just need the update.
